Tuna & Rice Balls

CLASSIC WINE PAIRING
A dry white wine from the Pessac-Léognan region will boost the flavor of the rice, and pair perfectly well with the fat of the tuna and the fromage frais.
ORIGINAL WINE PAIRING
A light, fruity red like a Bordeaux with its light tannins will pair well with the sesame seeds.
INGREDIENTS
90g of rice
80g of tuna in oil
70g of fromage frais (fresh, low-fat curd cheese)
10 sprigs of chives
3 tablespoons of sesame seeds
salt/pepper
Instructions
Cook rice 5 mins longer than indicated so it will be slightly over-cooked. Strain rice, then mix in blender. Let cool. With a fork, mash tuna into rice, then add fromage frais.
Salt and pepper, then finely chop chives. Mix well. Roll into small balls by hand. Sprinkle a few sesame seeds on top. Refrigerate.
